Keto Rogan Josh
A low-carb adaptation of the classic Indian dish, Rogan Josh, featuring tender lamb and a rich, flavorful sauce.
Ingredients
- β1 (1.5-2 pound) piece Lamb shoulder
- β2 tablespoons Ghee or Avocado oilFor cooking
- β1 medium OnionThinly sliced
- β3 cloves GarlicMinced
- β1 piece (1-inch) GingerGrated
- β1 teaspoon CuminGround
- β1 teaspoon CorianderGround
- β1/2 teaspoon Cayenne pepperAdjust to taste
- β2 teaspoons Rogan josh spice mixHomemade or store-bought
- β1/4 cup Tomato pureeLow-carb or homemade

Heat 1 tablespoon of ghee or avocado oil in a large Dutch oven over medium-high heat.

Add the lamb shoulder and cook until browned on all sides, about 5 minutes. Remove the lamb from the pot and set aside.

Add the remaining 1 tablespoon of ghee or avocado oil to the pot.

Add the sliced onion and cook until it starts to caramelize, about 5 minutes.

Add the minced garlic and grated ginger and cook for another minute.

Add the cumin, coriander, cayenne pepper, and Rogan josh spice mix. Cook for 1 minute.

Add the tomato puree and stir to combine. Bring the mixture to a simmer.

Return the lamb shoulder to the pot and cover with a lid.

Transfer the pot to the oven and braise the lamb for 2 1/2 to 3 hours, or until it is tender and falls apart easily.

Remove the pot from the oven and let it cool slightly.

Shred the lamb with two forks and serve it with the rich, flavorful sauce.
