Russian-Style Morcilla Omelette
A breakfast omelette inspired by Russian cuisine, featuring spicy Spanish morcilla sausage and a silky smooth texture.

Crack the eggs into a bowl and whisk them together with the milk until smooth.

Heat the butter in a small non-stick pan over medium heat.

Add the morcilla slices and cook until browned and crispy, about 2-3 minutes per side.

Pour the egg mixture over the morcilla and cook until the edges start to set, about 1-2 minutes.

Use a spatula to gently lift and fold the edges of the omelette towards the center, allowing the uncooked egg to flow to the edges.
