Grilled Chicken Fajitas
Savory and spicy grilled chicken and bell peppers, served with warm flour tortillas.
Ingredients
- β 1 pound boneless, skinless chicken breast
- β 1/2 cup salsafor serving
- β 1/4 cup chopped fresh cilantrofor garnish
- β 1 large onion, sliced
- β 2 large bell peppers, slicedany color
- β 2 tablespoons olive oilfor grilling
- β 1 teaspoon ground cuminoptional
- β 1/2 teaspoon chili powderoptional

1. Preheat grill to medium-high heat.

2. In a small bowl, whisk together cumin, chili powder, and olive oil.

3. Brush the mixture on both sides of the chicken.

4. Grill the chicken for 5-7 minutes per side, or until cooked through.

5. Meanwhile, grill the sliced onion and bell peppers for 3-4 minutes per side, or until tender.

6. Warm flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble fajitas by placing chicken and vegetables onto tortillas and serving with salsa and cilantro.
