Paleo Savory Potato Cakes
A paleo-friendly twist on traditional potato pancakes, made with crispy potato and savory herbs.
Ingredients
- β2 large Russet potatoes
- β1 medium Onion
- β2 cloves Garlic
- β1 tsp Savory herbssuch as thyme and rosemary
- β1 Egg
- β1/4 cup Coconut flour
Instructions

Grate the potatoes and onion in a food processor.

Heat a non-stick pan with 1 tsp coconut oil over medium heat.

Add the grated potatoes and onion to the pan and stir fry for 5 minutes.

Mash the garlic and add it to the pan with the potatoes and onion.

Add the savory herbs and stir to combine.

In a separate bowl, whisk the egg and coconut flour together.

Add the egg mixture to the pan and stir to combine.
