Traditional Portuguese Paella
A classic Spanish-inspired dish from Portugal, made with savory chicken, seafood, and spices.
Ingredients
- β1 cup paella rice
- β1 pound chicken breastcut into bite-sized pieces
- β1 pound shrimppeeled and deveined
- β1 pound boneless pork shouldercut into bite-sized pieces
- β1/2 pound salty sausagesuch as chorizo
- β2 tablespoons soft butter
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato paste

Heat the olive oil in a large paella pan over medium-high heat.

Add the chicken and pork, cooking until browned, about 5 minutes.

Remove the meat from the pan, and add the shrimp, cooking until pink, about 2-3 minutes.

Add the sausage and cook, breaking it up with a spoon, until browned, about 3-4 minutes.

Add the onion and garlic to the pan, cooking until the onion is translucent, about 3-4 minutes.

Add the tomato paste, cooking for 1-2 minutes, until fragrant.

Add the paella rice to the pan, stirring to coat with the oil and mix with the vegetables.

Add the chicken broth to the pan, and bring to a boil.

Reduce the heat to low, and simmer, covered, for 20-25 minutes, or until the rice is tender.

Remove the paella from the heat, and let rest, covered, for 5 minutes.

Serve hot, garnished with chopped fresh parsley, if desired.

Note: Be sure to cook the paella over high heat to achieve the crispy crust at the bottom, known as the socarrat.
