Lamb Spanakopita Casserole
A French twist on the classic Greek dish, combining the flavors of lamb and spanakopita in a hearty casserole.
Ingredients
- β1 1/2 pounds Lamb shoulder, boneless
- β2 tablespoons Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 package Frozen spanakopita, thawed
- β1 cup Feta cheese
- β1/4 cup Fresh parsley
- βto taste Salt
- βto taste Black pepper

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat olive oil over medium-high heat. Add lamb shoulder and cook until browned on all sides, about 5 minutes.

Remove lamb from skillet and set aside. Add onion and garlic to skillet and cook until onion is translucent, about 3-4 minutes.

Add frozen spanakopita to skillet and cook for an additional 2 minutes.

In a large bowl, combine cooked lamb, spanakopita mixture, feta cheese, parsley, salt, and black pepper.

Transfer mixture to a 9x13 inch baking dish and cover with aluminum foil.

Bake for 25 minutes, then remove foil and continue baking for an additional 10-15 minutes, or until lamb is cooked through.
