Italian-Style Paella Potatoes
A tasty Italian-inspired dish that combines the flavors of paella with the comfort of roasted potatoes.

- β1 medium Spanish potato
- β1 medium Russet potato
- β1 cup Paella riceoptional, traditional paella is made with rice
- β2 tablespoons Olive oil
- β2 cloves Garlicminced
- β1 small Onionchopped
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 cup Fresh parsleychopped, for garnish

Peel and chop the robust potatoes into 1-inch pieces.

Place the chopped potatoes in a bowl and drizzle with olive oil, salt, and black pepper.

Toss the potatoes to coat evenly and spread them out in a single layer on a baking sheet.

Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.
