Vegetarian German Stew
A hearty and comforting German-inspired stew made with robust vegetables and a variety of flavors.
Ingredients
- β2 cups carrots
- β3 medium potatoes
- β1 large onion
- β2 stalks celery
- β1 large red bell pepper
- β2 tablespoons tomato paste
- β2 cups beef broth (vegetarian version)
- β1 teaspoon dry thyme
- β1 teaspoon salt
- β1/2 teaspoon black pepper
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Add the red bell pepper and cook for an additional 2 minutes.

Stir in the tomato paste and cook for 1 minute.

Add the beef broth, thyme, salt, and pepper. Bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.

Add the potatoes and continue to simmer for an additional 15 minutes, or until the potatoes are tender.
