Uruguayan Roasted Courgette Bake
A delicious and easy-to-make Uruguayan-inspired dish featuring roasted courgettes baked in a flavorful mixture.

- β3 cloves garlic
- β2 tablespoons olive oil
- β2 tablespoons Uruguayan chimichurri sauce
- β1/2 cup grated cheddar cheese

Slice the courgettes into 1/2-inch thick rounds.

In a large bowl, toss the courgette slices with olive oil, Uruguayan chimichurri sauce, salt, and pepper.

Arrange the courgette slices in a single layer in a 9x13 inch baking dish.
