Vegan Mediterranean Bean Gratin
A flavorful, plant-based take on the classic French dish, featuring roasted Mediterranean vegetables and creamy long beans.
Ingredients

- ●1 cup, sliced Roasted red peppers
- ●1/2 cup, pitted Mediterranean olives
- ●8 oz Vegan cream cheese
- ●2 cloves, minced Garlic
- ●1/4 cup, chopped Fresh parsley

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the garlic and olive slices until fragrant.

Add the sliced roasted red peppers and cook for 2-3 minutes.

In a separate bowl, mix the vegan cream cheese and chopped parsley.

Combine the cooked pepper mixture and cream cheese mixture.
