Roasted Pepper and Manchego Naan
A flavorful and spicy Indian-inspired flatbread filled with roasted peppers and manchego cheese. Perfect for snacking or as a side dish.
Ingredients
- β2 cups light flour
- β2 roasted peppersdiced
- β1 cup manchego cheeseshredded
- β1/4 cup Spanish peppersdiced
- β1/4 cup pistohomemade or store-bought
- βto taste salt
- β1/2 cup water

1. In a large mixing bowl, combine flour, salt, and water. Mix well to form a dough.

2. Knead the dough for 5-7 minutes until smooth and elastic.

3. Divide the dough into 6-8 equal portions.

4. Roll out each portion into a thin circle.

5. Heat a non-stick skillet or tava over medium heat.

6. Place a naan on the skillet and cook for 1-2 minutes or until it starts to puff up.

7. Flip the naan and cook for another 1-2 minutes.

8. Brush the naan with pisto and top with roasted peppers, manchego cheese, and Spanish peppers.

9. Fold the naan in half to enclose the filling.
