Roasted Cherry Tomato Salsa
A fresh and spicy salsa made with roasted cherry tomatoes, onions, and jalapenos, perfect for topping tacos or grilled meats.
Ingredients
- β1 1/2 cups cherry tomatoeshalved
- β1/2 cup red oniondiced
- β1 roasted australian jalapenoseeded and finely chopped
- β2 cloves garlicminced
- β1/4 cup fresh cilantrochopped
- β2 tablespoons tart lime juice
- β1/2 teaspoon salt

Preheat the oven to 400Β°F (200Β°C).

Toss the cherry tomatoes with 1 tablespoon of oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until the tomatoes are tender and lightly charred.

In a blender or food processor, combine the roasted tomatoes, red onion, jalapeno, garlic, and cilantro. Blend until coarsely chopped.

Stir in the lime juice and season with salt to taste.
