Spiced Norwegian Beef Stew
A hearty and flavorful stew made with tender Norwegian beef, aromatic spices, and a hint of galangal.

- β1.5 pounds Norwegian beef stew meatCut into 1-inch cubes
- β2 inches GalangalPeel and slice into thin rounds
- β1 medium OnionChop into 1-inch pieces
- β2 medium CarrotsPeel and chop into 1-inch pieces
- β3-4 medium PotatoesPeel and chop into 1-inch pieces
- β1 cup Red wineUse a full-bodied red wine
- β2 cups Beef brothHomemade or store-bought
- β2 tablespoons Spiced beef broth mixAvailable at most grocery stores
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste
- β1/4 cup Fresh parsleyChopped, for garnish

Heat oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the galangal and cook until fragrant, about 1 minute.

Add the onion and carrots and cook until the vegetables are tender, about 5 minutes.

Add the potatoes, red wine, beef broth, and spiced beef broth mix.

Return the beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, until the beef is tender, about 2 hours.

Season with salt and black pepper to taste.
