Irish Cream Keto Stir Fry
A rich keto stir fry featuring Irish cream and a blend of cheeses.
Ingredients
- β2 tablespoons butter
- β1 cup Irish cream
- β8 ounces cream cheese
- β1 cup shredded cheddar cheese
- β1 cup sliced mushrooms
- β1 cup fresh spinach
- β2 cloves minced garlic
- βto taste salt
- βto taste pepper
Instructions

Melt 1 tablespoon of butter in a large skillet over medium heat.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the garlic and cook for an additional 1-2 minutes.

Stir in the Irish cream and bring to a simmer.

Reduce the heat to low and let simmer for 2-3 minutes, or until the sauce has thickened slightly.

Stir in the cream cheese until melted and smooth.

Add the shredded cheddar cheese and stir until melted and well combined.

Add the fresh spinach and cook until wilted.
