Thai Lamb and Seco Curry
A flavorful Thai curry made with rich lamb and seco, served with fragrant Thai rice.
Ingredients
- β1.5 pounds Lamb shoulderCut into 2-inch pieces
- β2 tablespoons SecoGround cumin
- β2 tablespoons Coconut oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 tablespoons Thai red curry paste
- β1 tablespoon Fish sauce
- β1 tablespoon Brown sugar
- β1/4 cup Thai basilChopped
- β1 cup Rice

Heat the coconut oil in a large pan over medium-high heat.

Add the lamb and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 3 minutes.

Add the curry paste and cook for 1 minute, stirring constantly.

Add the seco, fish sauce, and brown sugar, and stir to combine.

Add the lamb back into the pan and stir to coat with the curry sauce.

Reduce heat to low and simmer, covered, for 1 hour.

Stir in the Thai basil.
