Middle Eastern Lamb Tagine
A rich and flavorful Moroccan-inspired stew made with tender lamb, aromatic spices, and dried fruits.
Ingredients
- β1 lb Lamb shoulder, bone-inCut into 1-inch pieces
- β2 tbsp Olive oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1-inch piece GingerGrated
- β1 tsp Cumin
- β1/2 tsp Cinnamon
- β1/2 tsp Paprika
- β1/4 cup Raisins
- β2 tbsp Honey

Heat oil in a large Dutch oven over medium heat.

Add onion and cook, stirring occasionally, until caramelized, about 8 minutes.

Add garlic and ginger; cook, stirring constantly, for 1 minute.

Add lamb; cook, stirring occasionally, until browned, about 5 minutes.

Add cumin, cinnamon, and paprika; cook, stirring constantly, for 1 minute.

Add raisins and honey; stir to combine.

Add 1 cup of water; bring to a boil.

Reduce heat to low; cover and simmer, stirring occasionally, until lamb is tender, about 1 1/2 hours.
