Moroccan Tagine with Vegetables
A hearty, slow-cooked stew from Morocco, made with rich and smoky flavors, and featuring a variety of vegetables.
Ingredients
- β2 teaspoons Rich Smoky Moroccan Spice Blend
- β1 large Onionchopped
- β2 medium Carrotspeeled and chopped
- β1 medium Zucchinichopped
- β1 medium Red Bell Pepperchopped
- β2 large Potatoespeeled and chopped
- β1 can (14.5 oz) Chickpeasdrained and rinsed
- β1 can (14.5 oz) Diced Tomatoesdrained

Heat oil in a large Dutch oven over medium-high heat.

Add the onion and cook, stirring occasionally, until lightly browned, about 5 minutes.

Add the carrots, zucchini, red bell pepper, and potatoes. Cook, stirring occasionally, until the vegetables are slightly tender, about 5 minutes.

Add the Moroccan spice blend, chickpeas, and diced tomatoes. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to medium-low and cook, covered, until the vegetables are tender, about 25-30 minutes.
