Vietnamese Sausage Pho
Rich, flavorful pho made with spicy Vietnamese sausage and a variety of fresh herbs.
Ingredients
- β1 pound Vietnamese sausageSuch as chorizo or Knockwurst
- β2 quarts Rich beef brothHomemade or store-bought
- β1 pound Pho noodlesFresh or dried
- β1 large OnionThinly sliced
- β2 inches GingerSliced
- β2 tablespoons Fish sauceOptional
- β2 tablespoons Soy sauceOptional
- β1 bunch Fresh basilChopped
- β1 bunch Fresh mintChopped
- β4 Lime wedgesFor serving
Instructions

Bring the beef broth to a boil in a large pot.

Reduce heat to a simmer and add the sliced onion and ginger.

Cook for 10 minutes, or until the onion is translucent.

Add the Vietnamese sausage and cook for 5 minutes, or until browned.

Add the fish sauce and soy sauce, if using.

Cook for an additional 2 minutes.

Add the pho noodles to the pot and cook according to package instructions.

Divide the noodles among four bowls.

Slice the cooked sausage and place on top of the noodles.
