- β1 large Onion
- β3 cloves Garlic
- β2 medium Carrots
- β2 medium Potatoes
- β2 tsp Mediterranean seasoning
- β1 tsp Dried thyme
- β2 tbsp Tomato paste
- β4 cups Stew

Heat oil in a large pot over medium heat.

Add onion and garlic and cook until softened, about 5 minutes.
