Thai Turkey Curry
A flavorful and spicy Thai-inspired dish made with tender turkey and rich curry sauce. Serve with steamed rice or noodles for a delicious and satisfying meal.
Ingredients
- β1 pound, cut into bite-sized pieces turkey breast
- β1 can (14 oz) coconut milkfull-fat or low-fat, depending on preference
- β2 tablespoons curry pasteThai red or green curry paste
- β1 tablespoon fish sauce
- β1 tablespoon brown sugar
- β1 tablespoon rice vinegar
- β2 tablespoons vegetable oil
- β1 cup, sliced mushrooms
- β1 cup, sliced bell peppers

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add the turkey and cook until browned, about 5-7 minutes.
