Vanilla Custard Mochi
A Japanese-inspired dessert featuring a rich vanilla custard filling enclosed in a soft and chewy mochi made with argentinian rice flour.
Ingredients

- β1/2 cup Water
- β1 cup Granulated Sugar
- β1/2 teaspoon Vanilla Extract
- β1 cup Rich Custard
- β4-6 Mochi Molds
Instructions

Combine rice flour and water in a bowl to form a dough.

Knead the dough for 10 minutes until it becomes smooth and pliable.

Divide the dough into 4-6 equal pieces.

Roll each piece into a ball and flatten it slightly into a disk shape.

Heat a non-stick pan or griddle over medium heat.

Cook each mochi disk for 2-3 minutes on each side, until it's lightly browned and puffed up.

Meanwhile, prepare the custard filling by mixing the rich custard with vanilla extract.

Assemble the mochi by placing a spoonful of custard filling in the center of each mochi disk.
