Greek Emmental Stifado
A hearty Greek stifado recipe made with tender beef, rich emmental cheese, and a hint of spices.
Ingredients
- ●500g beef stew meatcut into 2cm cubes
- ●1 onionchopped
- ●2 cloves garlicminced
- ●200ml red winedry
- ●60g tomato pastecrushed
- ●400ml beef brothhomemade or store-bought
- ●2 tsp stifado spice mixavailable at most supermarkets
- ●250g emmental cheesegrated

Heat oil in a large Dutch oven over medium heat.

Brown the beef in batches until browned on all sides.

Remove the browned beef from the pot and set aside.

Add more oil if necessary and sauté the onion until translucent.

Add the minced garlic and cook for 1 minute.

Add the red wine and stir to deglaze the pot.

Add the crushed tomato paste and beef broth, stirring to combine.

Return the browned beef to the pot and add the stifado spice mix.

Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours.

Stir in the grated emmental cheese until melted and well combined.

Serve hot, garnished with chopped fresh parsley if desired.
