Eggplant Parmesan
Classic Italian dish featuring breaded and fried eggplant slices layered with tomato sauce and melted mozzarella cheese.

- β1 cup all-purpose flour
- β2 eggs
- β1/2 cup bread crumbs
- β1/2 cup parmesan cheese
- β1 jar tomato sauce
- β1 cup mozzarella cheese
- β1/4 cup olive oil
- βto taste salt
- βto taste pepper

1. Slice the eggplant into 1/4-inch thick rounds.

2. Season both sides of the eggplant slices with salt and pepper.

3. Dip each eggplant slice into the flour, then the eggs, and finally the bread crumbs, pressing gently to adhere.

4. Heat about 1/4 inch of olive oil in a large skillet over medium-high heat.

5. Fry the eggplant slices until golden brown on both sides, about 3-4 minutes per side.

6. Transfer the fried eggplant slices to a baking dish.

7. Spread a layer of tomato sauce over the eggplant slices.

8. Sprinkle shredded mozzarella cheese over the tomato sauce.

9. Bake in a preheated oven at 375Β°F (190Β°C) for about 20-25 minutes, or until the cheese is melted and bubbly.
