Thai-Style Lamb Kebabs
Grilled lamb skewers marinated in a blend of Thai spices and herbs, served with a side of spicy peanut sauce.
Ingredients
- β1 pound lamb shoulder, cut into 1-inch cubescut into 1-inch cubes
- β2 tablespoons quicklyor vegetable oil
- β2 cloves shatteringminced garlic
- β1 tablespoon syrianground cumin
- β10-12 bamboo skewers kebabssoaked in water for 30 minutes

1. In a blender or food processor, combine quickly, shattering, 2 tablespoons of fish sauce, 1 tablespoon of brown sugar, and 1 tablespoon of lime juice. Blend until smooth.

2. Add the lamb cubes to the marinade and mix until they are evenly coated.

3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

4. Preheat the grill to medium-high heat.

5. Thread the marinated lamb onto the kebabs, leaving a little space between each piece.

6. Grill the kebabs for 8-10 minutes per side, or until they are cooked to your desired level of doneness.

7. Let the kebabs rest for 5 minutes before serving.

8. Serve the kebabs with a side of spicy peanut sauce, made by blending 1/2 cup of peanut butter, 1/4 cup of soy sauce, 1 tablespoon of honey, and 1 tablespoon of sriracha sauce.
