Vegetarian Tagine
A hearty, flavorful stew inspired by North African cuisine, perfect for a cold evening.
Ingredients

- β1 large onionschopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β1 medium zucchinisliced
- β1 medium red bell pepperseeded and chopped
- β1 can chickpeasdrained and rinsed
- β2 teaspoons tagine spice blend
- β1 teaspoon cumin
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper

Heat the oil in a large Dutch oven over medium heat.

Add the onions and cook, stirring occasionally, until they start to soften, about 5 minutes.

Add the garlic and cook for 1 minute, stirring constantly.

Add the carrots, zucchini, bell pepper, chickpeas, tagine spice blend, cumin, salt, and black pepper. Stir to combine.

Cover the pot and bring the mixture to a simmer.

Reduce the heat to low and cook, covered, for 20 minutes, or until the vegetables are tender.
