Thai Chicken Skewers
Spicy and aromatic Thai-style chicken skewers, marinated in a mixture of soy sauce, lime juice, and chili flakes.
Ingredients
- β500g chickenboneless, skinless chicken thighs
- β2tbsp quicksoy sauce
- β2tbsp roastedpeanut oil
- β1tsp chili flakesadjust to taste
- β1tbsp lime juicefreshly squeezed
- β2cloves garlicminced
- β1inch gingergrated
- β1tbsp brown sugaroptional
- β1tsp fish sauceoptional
- β1 cucumbersliced
Instructions

Thread chicken, onion, and bell pepper onto skewers.

In a large bowl, whisk together soy sauce, peanut oil, chili flakes, lime juice, garlic, ginger, brown sugar, and fish sauce.

Add the chicken skewers to the marinade and mix to coat.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Preheat grill to medium-high heat.

Remove the chicken from the marinade and cook for 8-10 minutes per side, or until cooked through.
