Peruvian Roasted Chicken
A flavorful and moist Peruvian roasted chicken recipe, perfect for any occasion.
Ingredients
- ●1 whole (3-4 lbs) Chicken
- ●1 cup QuickQuick cooking oil or neutral oil
- ●4 cloves Garlic
- ●2-3 Peruvian aji amarillo pepperOr substitute with jalapeño or serrano pepper
- ●1 tsp Black pepper
- ●1 tsp Salt
- ●1 tsp Cumin
- ●1 tsp Paprika
- ●1/4 cup Olive oil
- ●chopped (optional) Fresh cilantro

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together garlic, aji amarillo pepper, black pepper, salt, cumin, and paprika.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

Drizzle the olive oil over the chicken and rub it in to coat.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Garnish with chopped fresh cilantro, if desired.
