Irish Rhubarb Crumble
A sweet and tangy dessert combining the flavors of irish oats and rhubarb topped with a crunchy crumble.

- β250g irish oats
- β400g rhubarb
- β100g sugar
- β50g all-purpose flour
- β80g cold unsalted butter
- β50g brown sugar
- β20g quick oats
- β20g nutty granola

Preheat oven to 375Β°F (190Β°C).

Peel and chop rhubarb into 2-inch pieces.

In a large bowl, combine chopped rhubarb, sugar, and flour. Mix until rhubarb is evenly coated.

Transfer rhubarb mixture to a 9x9-inch baking dish.

In another bowl, combine irish oats, brown sugar, and nutty granola. Mix until well combined.

Add cold unsalted butter to the oat mixture and use your fingers to work it into the dry ingredients until crumbly.

Spread the crumble mixture evenly over the rhubarb.
