Quick Irish Lamb Bake
A hearty and flavorful lamb dish inspired by traditional Irish cuisine. This recipe is perfect for a weeknight dinner.

- β2 lbs Lamb shoulderboneless
- β4-5 Carrotspeeled and chopped
- β2-3 Potatoespeeled and chopped
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 sprigs Rosemaryfresh
- β6 slices Bacondiced
- β2 tbsp All-purpose flourfor dusting
- β2 tbsp Bragg's Apple Cider Vinegarfor marinade
- β Salt and pepperto taste

Preheat oven to 400Β°F (200Β°C).

Season the lamb with salt and pepper.

In a large bowl, whisk together the flour, garlic, and rosemary. Add the lamb and toss to coat.

In a large Dutch oven or oven-safe pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.

Add the lamb to the pot and cook until browned on all sides, about 5 minutes.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chopped carrots and potatoes, and cook for 5 minutes.

Add the Bragg's Apple Cider Vinegar and stir to combine.

Transfer the pot to the preheated oven and bake for 2-3 hours, or until the lamb is tender and the vegetables are cooked through.
