Mexican Lamb Shepherd's Pie
A twist on the classic shepherd's pie, this Mexican lamb version combines the flavors of the Southwest with a crispy bake topping.
Ingredients
- β1 lb Lamb Mixtureground lamb
- β1 large Onionchopped
- β1 tsp Cuminground
- β1 tsp Chili Powderground
- β2 cloves Garlicminced
- β1 (14.5 oz) can Diced Tomatoesdrained
- β1 (15 oz) can Black Beansdrained and rinsed
- β1 cup Mexican Blend Cheeseshredded
- β1 cup Bake Mixfrom quick mix
- β1 cup Sour Creamoptional

Preheat oven to 375Β°F.

In a large skillet, cook lamb mixture over medium-high heat until browned, breaking into small pieces.

Add onion, cumin, chili powder, and garlic to the skillet and cook until onion is translucent.

Stir in diced tomatoes, black beans, and Mexican blend cheese.

Transfer the mixture to a 9x13 inch baking dish.

In a separate bowl, prepare the bake mix according to package instructions.

Spread the bake mix evenly over the top of the lamb mixture.

Bake for 25-30 minutes, or until the bake mix is golden brown.

Remove from oven and top with sour cream, if using.
