Thai Filo Spring Rolls
Delicious Thai-inspired spring rolls made with crispy filo and savory fillings. Perfect as a snack or appetizer.
Ingredients
- β4-6 sheets Filoso pastry sheets
- β1 cup Quick-cooked vegetablessuch as cabbage, carrots, and bean sprouts
- β1 cup Ethiopian-style lentilscooked with onions, garlic, and spices
- β1 block Baked tofumarinated in Thai red curry paste
- β1/4 cup Chopped cilantro
- β2 tbsp Sesame oil
- β1 tsp Thai red curry paste

Preheat the oven to 400Β°F (200Β°C).

Cut the filo pastry sheets into 4 equal pieces.

In a pan, heat 1 tablespoon of sesame oil over medium heat. Add the quick-cooked vegetables and cook until tender.

In a separate pan, heat 1 tablespoon of sesame oil over medium heat. Add the baked tofu and cook until crispy.

In a bowl, mix together the cooked lentils, cooked vegetables, and crispy tofu.

Place a piece of filo pastry on a flat surface and brush with a little sesame oil. Spoon a tablespoon of the lentil mixture onto the center of the pastry.

Fold the bottom half of the pastry over the filling, then fold in the sides and roll up the pastry to form a tight cylinder. Repeat with the remaining pastry and filling.

Place the spring rolls on a baking sheet lined with parchment paper and brush with a little sesame oil.

Bake in the preheated oven for 15-20 minutes, or until golden brown.
