Argentinian Mung Bean Stew
A hearty, comforting stew made with mung beans and a variety of vegetables, inspired by the flavors of Argentina.
Ingredients
- β1 cup mung beansrinsed and drained
- β2 tablespoons roastsuch as sweet potato
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup sproutssuch as broccoli
- β1 cup bean sproutssuch as mung bean sprouts
- β2 tablespoons tomato pastecanned
Instructions

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the mung beans, roast, sprouts, and bean sprouts. Cook for 2-3 minutes, stirring frequently.

Add the tomato paste and stir to combine.

Add 4 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 30-40 minutes, or until the mung beans are tender.

Season with salt and pepper to taste.
