Russian Rice Pilaf
A classic Eastern European side dish made with rice, vegetables, and spices.
Ingredients

- β2 cups quickchopped mixed vegetables (e.g., carrots, peas, corn)
- β2 teaspoons russiandried parsley and dill
- β2 tablespoons crispchopped fresh parsley
- β2 tablespoons pilafolive oil
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped mixed vegetables and cook until tender, about 3-4 minutes.

Add the rice and stir to combine with the vegetables and oil.

Add the dried parsley and dill, and stir to combine.

Cook for 2-3 minutes, stirring frequently.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
