Spicy Uruguayan Gratin
A Thai-inspired dish combining the bold flavors of Uruguay with the creaminess of a gratin.
Ingredients
- β4 slices Uruguayan Chorizo Sausageabout 1/2 inch thick
- β2 tbsp Horseradishgrated
- β2 medium Silky Eggplantsliced into 1/4 inch thick rounds
- β4 cloves Pungent Garlicminced
- β2 tbsp Thai Red Curry Pastestore-bought or homemade
- β1 cup Coconut Milkfull-fat or low-fat
- β1 cup Gratin Cheeseshredded, such as mozzarella or cheddar
- β1/4 cup Fresh Thai Basilchopped

Preheat the oven to 375Β°F (190Β°C).

Cook the Uruguayan Chorizo Sausage in a pan over medium-high heat until browned, about 5 minutes.

Remove the sausage from the pan and set aside.

In the same pan, add the Horseradish, Pungent Garlic, and cook for 1 minute.

Add the Silky Eggplant slices to the pan and cook until tender, about 5 minutes.

Stir in the Thai Red Curry Paste and cook for 1 minute.

Add the Coconut Milk to the pan and bring to a simmer.

Return the cooked sausage to the pan and stir to combine.

Transfer the mixture to a baking dish and top with Gratin Cheese.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Garnish with Fresh Thai Basil and serve hot.
