Vegan Gigantes Plaki
A hearty vegan twist on the classic Greek Gigantes Plaki, made with pungent garlic, crunchy onions, and tender gigantes beans.
Ingredients
- β3 cloves pungent garlic
- β1 medium crunchy onion
- β1 can (14.5 oz) gigantes beansdrained and rinsed
- β2 tbsp Greek extra virgin olive oil
- β2 tbsp lemon juice
- β2 tbsp tomato paste
- β1 tsp oregano
- β1 tsp salt
- β1/4 tsp black pepper

Heat the olive oil in a large saucepan over medium heat.

Add the minced garlic and cook, stirring occasionally, for 4-5 minutes or until fragrant and lightly golden.

Add the chopped onion and cook, stirring occasionally, for 5-7 minutes or until softened and lightly caramelized.

Add the gigantes beans, tomato paste, oregano, salt, and black pepper. Stir to combine.

Cook for 2-3 minutes, stirring occasionally.

Stir in the lemon juice and continue cooking for an additional 2 minutes.
