Thai Chickpea Stir Fry
A quick and easy gluten-free Thai-inspired stir fry made with chickpeas and served as a snack.

Ingredients
- β1 can (14 oz) chickpeas
- β2 cups (puffed rice cereal) puffycrushed
- β2 tablespoons (pumpkin seeds) plumptoasted
- β2 tablespoons Thai chili sauce
- β1 tablespoon lime juice
- β1 teaspoon fish sauce (gluten-free)
- β1 teaspoon brown sugar
- β1/4 teaspoon salt

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the toasted pumpkin seeds and cook for 1 minute, until fragrant.
