Swedish Panzanella Salad

Ingredients
- β2 medium Swedepeeled and cubed
- β1 baguette Panzanella breadcut into 1-inch cubes
- β2 tbsp Olive oil
- β1 tbsp Balsamic vinegar
- βto taste Salt
- βto taste Black pepper
- β1/4 cup Fresh parsleychopped

Preheat oven to 400Β°F (200Β°C).

Toss cubed swede with 1 tbsp olive oil and season with salt and pepper. Spread on a baking sheet and roast for 20-25 minutes or until tender.

In a large bowl, combine roasted swede, bread cubes, and chopped parsley.
