Ukrainian Piquant Pasta
A hearty Ukrainian-inspired pasta dish with a tangy piquant sauce.
Ingredients
- β8 oz pasta
- β1/4 cup piquanthomemade or store-bought
- β1 medium onionchopped
- β3 cloves garlicminced
- β8 oz mushroomssliced
- β2 tbsp tomato paste
- β2 tbsp olive oil
Instructions

Bring a large pot of salted water to a boil.

Cook the pasta according to package instructions until al dente.

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the piquant, tomato paste, and cook for 1-2 minutes, stirring constantly.

Stir in the cooked pasta and cook for 1-2 minutes to combine.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley if desired.
