Uruguayan Rice Bake

- β1 cup Uruguayan rice
- β1 cup pillowy rice
- β2 bakelarge eggs
- β2 tbsp mustardyDijon mustard
- β2 cups water
- β1 tsp salt
- β1/2 tsp black pepper

Preheat oven to 375Β°F (190Β°C).

In a large saucepan, bring 2 cups of water to a boil.

Add 1 cup of Uruguayan rice and cook according to package directions.

In a separate bowl, whisk together 2 large eggs and 2 tbsp of Dijon mustard.
