Malaysian-Italian Chicken Soup
A comforting and flavorful soup that combines the spices of Malaysia with the heartiness of Italian cooking.
Ingredients
- β1 pound chicken breastboneless, skinless
- β2 tablespoons malaysian chili pasteadjust to taste
- β2 inches fresh gingergrated
- β1/4 cup peppery arugulachopped
- β4 cups italian chicken brothlow-sodium
- β1 cup soup vegetablessuch as carrots, celery, and onions

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Add the grated ginger and cook for 1-2 minutes, until fragrant.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the Malaysian chili paste and cook for another minute, until fragrant.

Add the chicken broth, soup vegetables, and chicken breast to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10-12 minutes, or until the chicken is cooked through.
