Welsh Rarebit and Roasted Potato Gratin
A French-inspired gratin dish featuring roasted potatoes and a rich Welsh rarebit sauce.
Ingredients
- ●250g Welsh Rarebit Sauce
- ●4 large Red Potatoespeeled and thinly sliced
- ●1 head Red Cabbagechopped (optional)
- ●2 tbsp Olive Oil
- ●to taste Salt and Pepper
- ●150g Grated Gruyère

Preheat oven to 180°C (350°F).

Toss sliced potatoes with olive oil, salt, and pepper.

Arrange potatoes in a single layer in a baking dish.

Roast in the preheated oven for 20-25 minutes, or until golden brown.

While potatoes are roasting, heat the Welsh rarebit sauce in a saucepan over medium heat.

Add chopped red cabbage to the saucepan and stir to combine.

Once potatoes are done, remove from oven and top with the rarebit sauce mixture.

Sprinkle grated Gruyère over the top.

Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
