Turkish Vegetable Borek
A traditional Turkish dish consisting of flaky pastry pockets filled with roasted vegetables.
Ingredients
- β1 package (thawed) Phyllo doughfound in most supermarkets
- β1 medium, diced Roasted eggplantfrom yesterday's dinner
- β1 medium, diced Roasted red bell pepperfrom yesterday's dinner
- β1 medium, diced Roasted zucchinifrom yesterday's dinner
- β2 tablespoons Olive oilfor brushing phyllo dough
- βto taste Saltfor seasoning

Preheat oven to 375Β°F (190Β°C).

Cut phyllo dough into 4 equal pieces.

Place a piece of phyllo dough on a flat surface and brush with olive oil.

Place a few pieces of roasted eggplant, red bell pepper, and zucchini in the center of the phyllo dough.

Fold the phyllo dough over the filling to form a triangle and press the edges to seal.

Brush the top of the borek with olive oil and sprinkle with salt.

Repeat with the remaining phyllo dough and filling.

Place the borek on a baking sheet lined with parchment paper and bake for 20-25 minutes.
