French Vegetable Borek
A Turkish-inspired French dish, these savory borek are filled with roasted vegetables and perfect as a side or light meal.

- β1 package (thawed) Phyllo doughavailable at most grocery stores
- β2 tablespoons Butterfor brushing phyllo
- β1 cup Roasted turkish vegetable mixavailable at most grocery stores
- β1/2 cup Feta cheeseoptional
- β1/4 cup Fresh parsleychopped
- βto taste Salt and pepper
- β1 Eggbeaten

Instructions

Preheat oven to 375Β°F (190Β°C).

Thaw phyllo dough according to package instructions.

Cut phyllo into 4 equal pieces.

Brush each piece of phyllo with butter.

Place a tablespoon of roasted turkish vegetable mix on one half of each phyllo piece.
