Tunisian Roasted Tofu
A flavorful and healthy Tunisian-inspired dish featuring roasted tofu, perfect for a weeknight dinner.
Ingredients
- β1 block (14 oz) Extra-firm tofupressed and drained
- β2 tbsp Olive oil
- β1 tsp Tunisian spice blendor make your own with cumin, coriander, and paprika
- β2 cloves Garlicminced
- β1 small Red onionchopped
- β1 small Bell pepperchopped
- β1 cup Cherry tomatoeshalved
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 400Β°F (200Β°C).

Cut the tofu into 1-inch cubes and place on a baking sheet.

Drizzle with olive oil and sprinkle with Tunisian spice blend. Toss to coat.

Roast in the oven for 20-25 minutes, or until golden brown.

While the tofu is roasting, heat a large skillet over medium-high heat.

Add the minced garlic and cook for 1-2 minutes, until fragrant.

Add the chopped red onion and bell pepper, and cook for 3-4 minutes, until tender.

Add the halved cherry tomatoes and cook for an additional 2-3 minutes.

Season with salt and black pepper to taste.

Once the tofu is done roasting, add it to the skillet and toss with the vegetables.

Serve hot, garnished with fresh parsley or cilantro if desired.
