Roasted Kenyan Pasta with Comte
A unique Italian-inspired pasta dish featuring roasted Kenyan vegetables and a touch of creamy Comte cheese.
Ingredients
- ●2 large Kenyan sweet potatoes
- ●8 oz Pasta
- ●1/2 cup shredded Comte cheese
- ●2 Roasted red peppers
- ●2 tbsp Olive oil
- ●to taste Salt
- ●to taste Black pepper
- ●2 cloves Garlic
- ●1/4 cup chopped Fresh basil

Preheat the oven to 425°F (220°C).

Peel and chop the Kenyan sweet potatoes into 1-inch cubes.

Toss with olive oil, salt, and black pepper on a baking sheet.

Roast in the oven for 20-25 minutes, or until tender.

Cook the pasta according to package instructions.

In a large skillet, sauté the roasted red peppers and garlic until fragrant.

Add the cooked pasta to the skillet and toss with the pepper mixture.
