Russian Spring Rolls
Delicious vegetarian spring rolls filled with a creamy, oozy egg filling. Perfect as a snack or light lunch.
Ingredients
- ●12 pieces spring rollsstore-bought or homemade
- ●4 large eggbeaten with a fork
- ●1 cup velvetycream cheese, softened
- ●1/2 cup oozyricotta cheese
- ●2 tbsp russiandill pickle relish
- ●1 tbsp chopped fresh dilloptional
Instructions

Preheat oil in a deep frying pan or a deep fryer to 375°F (190°C).

Prepare the egg mixture by mixing the beaten eggs, cream cheese, ricotta cheese, and dill pickle relish in a bowl.

Place a spring roll wrapper on a clean surface. Place about 1 tablespoon of the egg mixture in the center of the wrapper.

Brush the edges of the wrapper with water. Fold the bottom half of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling.

When the oil is hot, carefully place a few of the spring rolls into the oil.

Fry for 2-3 minutes on each side, or until golden brown.

Remove the spring rolls from the oil with a slotted spoon and drain on paper towels.

Serve hot with chopped fresh dill if desired.

Note: You can also bake the spring rolls in a preheated oven at 400°F (200°C) for 12-15 minutes, or until golden brown.
