Irish Lamb Stew
A hearty, comforting lamb stew with a rich flavor, perfect for a keto diet. This dish is perfect for a cold winter night.
Ingredients
- β1 pound Irish lamb shoulderCut into 1-inch cubes
- β1/4 cup oily olivesPitted
- β3 cloves charred garlicMinced
- β2 cups stewLow-carb vegetable broth
- β1/4 cup fresh parsleyChopped
- β2 sprigs fresh thymeFresh
- β1 teaspoon saltKosher
- β1/2 teaspoon pepper
- β1/4 teaspoon black pepper

2. Add the lamb cubes and cook until browned on all sides, about 5 minutes.
