Irish Lamb Stew
A hearty German-inspired stew made with tender lamb and root vegetables.
Ingredients
- β1 pound lamb shoulder, cut into 2-inch cubes
- β2 medium carrots, peeled and chopped
- β2 large potatoes, peeled and chopped
- β1 medium onion, chopped
- β1 cup oaky red wineoptional
- β1 cup irish stoutoptional
- β2 cups stew broth
- β2 tablespoons tomato paste
- β1 teaspoon dried thyme
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat oil in a large Dutch oven over medium-high heat.

Sear lamb cubes until browned, about 5 minutes. Remove from pot and set aside.

Add onion and carrots to pot and cook until tender, about 5 minutes.

Add potatoes, thyme, salt, and pepper to pot. Cook for 2 minutes.

Add browned lamb, red wine, stout, and broth to pot. Stir to combine.

Bring stew to a boil, then cover and transfer to oven.

Bake at 300Β°F (150Β°C) for 2 hours, or until lamb is tender.

Stir in tomato paste. Serve hot, garnished with chopped fresh herbs if desired.

Serve with crusty bread or over egg noodles, if desired.
