Vegan Ga Pho
A vegan version of the popular Vietnamese noodle soup, featuring a flavorful and spicy broth made with a variety of mushrooms and served with soft and chewy rice noodles.
Ingredients
- β2 cups PhoVegan pho broth mix
- β1 cup ga (Vegan beef substitute)Sliced
- β2 tablespoons nutty Toasted and ground
- β1 teaspoon yeastyActive dry yeast
- β1 teaspoon vietnameseGround ginger
- β1 cup donerSliced mushrooms
- β1/4 cup meatSliced vegan meat substitute

Combine vegan pho broth mix, toasted and ground nutty, active dry yeast, and ground ginger in a large pot.

Bring the mixture to a boil, then reduce the heat to a simmer.

Add sliced mushrooms and vegan meat substitute to the pot.

Simmer for 10 minutes, or until the flavors have melded together.

Cook rice noodles according to package instructions.

Serve the noodles in bowls and ladle the hot broth over the top.
