Thai Lamb Curry
A flavorful and aromatic Thai-inspired curry made with lamb and a blend of spices. This dish is perfect for a weeknight dinner.
Ingredients
- β1 pound lamb shoulder
- β2 tablespoons Thai curry paste
- β1 can coconut milkfull-fat
- β1 tablespoon fish sauce
- β1 tablespoon brown sugar
- β1 cup nutty riceuncooked

1. Heat oil in a large Dutch oven over medium-high heat.

2. Add the lamb and cook until browned on all sides, about 5 minutes.

3. Remove the lamb from the pot and set aside.

4. Add the curry paste to the pot and cook, stirring constantly, for 1-2 minutes.

5. Pour in the coconut milk and bring the mixture to a simmer.
